What a great morning experience! Now that’s the way to start a day!  

Super-Easy Chocolate Chocolate Truffles are rich, smooth, delicious and intensely satisfying!  They make every occasion happier; and with Valentine’s Day coming up, it is important to have a little stash of (gluten free) Super-Easy Chocolate Chocolate Truffles tucked away to share with the people we care about.  You know, people such as ourselves for instance (oh, and of course
other people!)

I know how busy you are and you’re wondering how you’re going to have time to make these – no worries!  I figured out the easiest and quickest-way-possible to make them.  In fact, these gluten-free Chocolate Chocolate Truffles are so easy to make, even kids can make them; but I don’t recommend it because then there is less Chocolate for…us

 

How to Make (Fabulous)
Super-Easy Chocolate Chocolate Truffles

The super-easy way to make Chocolate Chocolate Truffles 
is with a food processor and to use ingredients that can be found 
at any grocery store without having to shop all over the place.

Super-Easy Chocolate Chocolate Truffles

3 cups (18 oz.) real-chocolate semi-sweet chips
1 1/4 cups heavy cream
1/4 cup (4 tablespoons) butter
Cocoa powder (unsweetened)

 

Gimme Gluten Free Method

  • Insert the chopper blade in the food processor and dump in all of the Chocolate Chips. 
  • In a heavy saucepan, heat the cream on low heat until just below the boiling point.  You will notice little bubbles form around the edges.  Pour the hot cream on top of the chocolate chips; put the top of the food processor on and process turning on and off until everything starts coming together.  Blend until smooth.  Add the butter.  Process until smooth and creamy. 

Put the chocolate mixture in a bowl and chill in the refrigerator until it is firm enough to be shaped into little balls.  Now, keep in mind – the truffles do NOT have to be perfect!

Shape ~ Choose your favorite method:

  1. A small melon baller/the smallest-size ice cream scoop 
  2. Spoon out with a teaspoon
  3. Pipe out with a pastry bag   
  • Place on a baking sheet lined with waxed paper.  Chill until cold; then roll the cold chocolate balls in the unsweetened cocoa powder. Take out of the cocoa and rub each little ball around between your hands. The heat of your hands will help form a perfectly round little truffle.  Roll each truffle in cocoa again. 

To Serve: 
You can put each Chocolate Chocolate Truffle in a candy paper cup; or place directly on a pretty china plate.  Bring the truffles to room temperature before you serve them.  They taste best at room temperature when the flavors have a chance to bloom!

Lynn’s Notes for Success:

CHOCOLATE:  I really love Guittard Semi-Sweet real Chocolate Chips.  

  • Don’t get a “cheap-o” brand of chocolate chips or you will be disappointed in the results.  Less expensive brands of Semi-sweet Chocolate Chips will not taste as rich or be as smooth as a quality brand. 

CREAM: I use organic heavy cream or I use the cream from Costco which contains 40% butterfat.  The richer your cream; the smoother, more decadent and wonderful your Chocolate Truffles will be. 

BUTTER: I use salted, organic butter because I like that little bit of salt in it.  Salt brings out flavor; again, use a quality butter.

COCOA: Cocoa can clump together in time.  If your cocoa is “clumpy” just quickly sift it into a bowl.  You can use any unsweetened cocoa you like; I used Hershey’s Unsweetened cocoa because that’s what was in my cupboard.  

MAKING AHEAD OF TIME:  Super-Easy Chocolate Chocolate Truffles are perfect for entertaining or gift giving!  You can make them over a week ahead of time!  In fact, they actually taste better than when they are freshly made.  The cocoa, butter, cream and chocolate all meld together and get more intense with flavor.
