Paleo Honey Flaxseed Muffins are soft, delicious and flavorful. This easy-to-make recipe has everyone asking for seconds (and even thirds!) But normally, does anyone like eating healthy bran muffins? No, of course not! No one likes them! And if your friends say that they do… they are lying. Unfriend them, at once. No wait! Instead, bake them some delicious Paleo Honey Flaxseed Muffins so they can stop lying – Hooray!
Sadly, I too used to choke down Honey Bran Muffins, simply because they were “supposed to be healthy.” But, not only were they NOT healthy (because bran muffins are loaded with gluten, sugar, unhealthy fat and very little fiber ~ Horrors!) they were beastly-dry and flavorless. Well, those “dark days” are over. Thank goodness!
Now, my Gorgeous Man and I start many happy mornings with soft, delicious, flavorful (and truly healthy) Paleo Honey Flaxseed Muffins! These muffins make us want to dance. (Seriously!)
Look at the top photo of my Paleo Honey Flaxseed Muffins. I made those muffins on Saturday morning ~ that is how they look when they are fresh out of the oven. (So yummy!) But now, scroll below, until you see the photo of the muffins sitting next to some blueberries and strawberries. Do you see it? Okay, awesome! Today is Monday and I just took that photo. Can you see how the muffins got even more moist? (I store them on our counter in a covered-glass cake plate.) Incredible, right? Normally, muffins get drier and crumbly after a couple of days; but not these muffins! I am telling you, these Honey Raisin Flaxseed Muffins are fabulous! In fact, I am not going to hold back… they ROCK!

Here is the secret for how to make fabulous, soft, high-fiber muffins: If you follow my recipe EXACTLY as I give it to you (don’t leave anything out and don’t change any of the ingredients) it is possible that my Paleo Honey Flaxseed Muffins could be the best-tasting, high-fiber muffins you have ever had in your life! (It is possible, you know!) But, how will you know unless you try them, right?
Oh, did I tell you that these muffins have 1 CUP of flaxseed per twelve muffins? Yeah. You read that right. ONE CUP of freshly ground Golden Flaxseed. And then they have high-protein almond flour, high-fiber coconut flour, fresh eggs, and honey… hey. why am I telling you this? Just get the recipe here.
Oh, wait, one more thing. I add raisins to the batter, because we just love raisins; but if you are not a raisin fan, leave them out. Oh and I must tell you this… the raisins just get plumper and plumper as the days go by. (This morning I almost cried when I took a bite because the raisins exploded with flavor, and the muffin was sooooo soft and good!) Oh mercy! I know I’m a “goof” because I get so excited about food, but ah well… we are, who we are, right?

WOW! These were so delicious, although I had to make them twice. The first time I used a coarse flax seed I had in the cupboard – big mistake! ONLY use the golden flaxseed and grind it yourself. The flax seed grinds into a nice, soft powdery substance that adds a soft texture to the muffins. I’m keeping half in the refrigerator and half in the freezer for another time.

I am so glad that you LOVE these Paleo Honey Flaxseed Muffins! And I am ever gladder (Ummm…I don’t think “gladder” is a word but you know what I mean) that you were persistent and made them again until you had success! Hooray!
FLAXSEED NOTES: Long ago…I baked with regular dark flaxseed in all my recipes, but then… I discovered the Holy Grail of flaxseed: Golden Flaxseed! And as you found, Golden Flaxseed when it is freshly ground is soft and powdery. (Quite lovely!) Golden Flaxseed is still super-healthy, just like the regular, dark-colored flaxseed, but with an enormous difference: Baked treats will look beautiful, taste wonderful; they will be a bit moister (especially with freshly ground flaxseed) and the texture will be lighter and softer.
RECOMMENDATION: I recommend buying whole Golden Flaxseed and grinding the seeds fresh – right before you put it in your mixing bowl in every recipe that calls for ground flaxseed. (Simply grind the flaxseed in an electric coffee mill). You will love the results!
