Lemon Parsley Dip makes fresh veggies DANCE the Tango!  This dairy and gluten free dip is fantastic with fresh vegetables and crackers.  When I served this fresh tasting, creamy lemon-herb dip to my family, my Gorgeous Man broke out in song, then began telling me how much he loved me.  Wellactually that might be a wee bit exaggerated… but he really was enamored with this dip!  

As “the fam” was enjoying the Lemon Parsley Dip and fresh vegetables, my mind began to roam… “How would this dip go with artichokes?”  I must have said that out loud because suddenly my Gorgeous Man went to the frig, then began cooking some artichokes! When the artichokes were done he set them on the counter next to the Lemon Parsley Dip.  

Our six year old grandson saw the artichokes and said, “What is THAT?”  I laughed, “Oh baby, these are artichokes.  Now watch, this how you eat one…  First you dip each artichoke leaf in the Lemon Parsley Dip, then you put the leaf between your teeth and pull it out.”  He watched intently.  

I asked, “Do you want to try it?”  Of course he wanted to try it.  He dipped an artichoke leaf into the Lemon Parsley Dip, ate it like he had been eating artichokes his entire life; then reached for another one,  “Gramma, it’s good!  I like it!”   Oh, he is such a brilliant little foodie!

The “Dip Adventure” continues… We had friends over for a Planked Salmon Dinner.  Oh my!  Fresh Salmon, hot off the grill, topped with a dollop of Lemon Parsley Dip (Sauce) taste… fabulous together!

But there’s more!  Next, we found that Lemon Parsley Dip makes a “Home Run Hit” creamy Salad Dressing, too!  The “Gluten Free Food Hater” came over for dinner (he generally hates all salads) but… get this… he ate an entire bowl full of salad with the Lemon Parsley Dip used as a salad dressing!  Oh yeah!

Tonight we are serving Lemon Parsley Dip (Sauce) with Crab Cakes… I can hardly wait.  Gotta run!  Oh, YIKES!  I almost forgot to give you the recipe! 

Lemon Parsley Dip (Sauce)
Gluten and Dairy Free, Lemon Parsley Dip can used as a dip for fresh vegetables, bread and crackers, a sauce for salmon (or any fish), crab cakes and it’s also makes a terrific salad dressing! 

1 cup mayonnaise (Use a good brand like Best Foods Mayonnaise)
Grated rind of one lemon
2 tablespoons fresh lemon juice
1 small-medium bunch parsley, very finely chopped
3-4 green onions (both the green and white part) ~ finely chopped 
       or 1/4 cup finely chopped fresh chives
1 large clove garlic, minced
1 teaspoon ground black pepper

1.  Mix everything together.  Spoon into a serving dish.  Garnish as desired.  Yum!

Make a wonderful potato salad with  this dip!


Note:  At the time of this writing, Best Foods Mayonnaise is both gluten and dairy free.  However, read the label each time you make a new purchase as manufacturers sometimes change their ingredients.
