Now the best way to mix up this delicious, gluten-free Garlic-Herb Salad Dressing is with a big whisk.  I think a big whisk is indispensable in the kitchen!  If you don’t have one, run, do not walk to your favorite kitchen shop and get one!

You can “dress up” your garden salad and make it as beautiful and colorful as a gorgeous, French painting.  You are an artiste!  Plus when you add things like, olives, pepperoncini’s and roasted red peppers you’re adding additional flavor and nutrition. We all love to eat “with our eyes” so make your eyes happy!

Garden Salad with Garlic-Herb Dressing

Garlic-Herb Dressing (Gluten Free)
1/3 cup great tasting olive oil
2 tablespoons red wine vinegar
Salt to taste  (I use 1/4 teaspoon Kosher salt or Redmond Real Salt – all natural sea salt)
1/8 teaspoon freshly ground, black pepper
1/2 teaspoon dried dill weed
2 teaspoons dried oregano
1 clove garlic, finely minced

Whisk together in a bowl.  Set aside until needed.

Salad Ingredients:
1/2 head, large leaf letturce (Use the entire head if your lettuce is small)
1 large tomato, cut into wedges (Use two if your tomato is small)
1/2  cucumber, peeled and sliced
1/2 red pepper, diced
1/4 cup mild red onion, sliced
3 radishes, sliced (optional)
Spanish olives – as many as you want
Roasted red peppers, diced and pepperoncini’s, if desired 

Method:

  1. Whisk the ingredients for the Garlic-Herb Salad Dressing in a bowl.  Set aside until needed.
  2. Put the salad ingredients in a large  bowl.  When you are ready to serve, add the dressing, toss and enjoy!
