In the winter, nothing is more welcome than a healthy, delicious salad that is packed full of vitamins and LIFE!  Easy Lemon Arugula Salad is the happy answer to all of our “light and luscious” healthy needs!

 

But isn’t Arugula Salad difficult to prepare?  No worries!  Easy Lemon Arugula Salad takes only five speedy-quick minutes to make.  And all you need are a few simple ingredients: Arugula, a Lemon and a great tasting Olive Oil!  (You already have sea salt and black pepper at your home, right?)

Actually, the hardest part about making this salad is just going to the grocery store if you don’t have these things on hand.  Oh, and get this… you can top your salad with some grilled chicken or shrimp; or leftover steak or salmon and BINGO!  Instant dinner. Oh yeah!

But, what if you wanted to make your salad go “over the top…”  Hmmm…  Well you could top it with a soft Montchevré Goat Cheese sprinkled on top; toasted pecans and fresh sliced pears…NO.  STOP!  We are going for light and luscious… light, LIGHT, LIGHT! (Remember?)  Oh, but we must do this lovely “over the top” version soon… like tomorrow. Yeah; that sounds good!  
Okay, let’s be good (for once in our lives) and make things – simple.  We can do this.  Just this once let’s not be an over-achiever, okay? Oh, well…maybe a little bit of over-achiever is okay… We could top our (light and luscious) Easy Lemon Arugula Salad with… pomegranate seeds and a few toasted pine nuts.  Those are super healthy things!

Fresh Lemon Arugula Salad
Serves two healthy, happy people

Ingredients 
2 tablespoon good tasting olive oil
1/4 teaspoon freshly grated lemon rind
1 tablespoon fresh-squeezed lemon juice
Sea Salt and freshly ground pepper to taste
Arugula (about 3 1/2 – 4 oz.)

Lynn’s Notes:  If you absolutely cannot find fresh Arugula at your grocery store, you can substitute fresh spinach.  The best place I’ve found that has Arugula consistently is Trader Joe’s.  I buy a 7 oz. bag of Wild Arugula “Wild Rocket Salad” from Trader Joe’s and use about half of the bag.

Method 
In a salad bowl, whisk together briskly the olive oil, freshly grated lemon rind, fresh lemon juice and salt and pepper to taste. Set aside.

Rinse your Arugula in cold water then spin dry in a salad spinner.  This will make your salad taste fresh picked and come alive!  Don’t leave this step out – I know you think you can…no, no, No!  If you don’t have a salad spinner, simply blot-dry the Arugula with paper towels. 

Toss the Arugula and dressing until it’s well coated.  Divide onto two salad plates.  (See I told you this was easy!)  

Easy Lemon Arugula Salad will make you want to sing and dance, “Gimme Gluten Free!”
