Fresh, hot gluten-free Caramel Corn is absolutely irresistible!  
When my brothers and I were kids, it seemed that every large Shopping Mall in town had a Caramel Corn store in it.  We loved to go shopping because we always got a big bag or box of that buttery, sweet, crunchy treat…yum!  But, if we had known how easy it was to make, we probably would have made it at home every day!

It’s so fun and super easy to make.  But I must warn you: Every kid in the neighborhood (and adults, too) will flock to your door with a lame-o excuse, like:  

“I just happened to be walking by and thought I’d say, hello…” 

And then they will look greedily into your kitchen with hungry, pleading eyes.  
It happens every time!  So, be prepared for company when you make yummy, crunchy, gluten-free ~ Super Easy Caramel Corn!

SUPER EASY CARAMEL CORN

INGREDIENTS:  
              1/2 CUP UN-POPPED POPCORN
      1/2 CUP BUTTER
      1/2 CUP FIRMLY PACKED BROWN SUGAR
      1/2 TEASPOON SALT


METHOD:
PREHEAT OVEN TO 325 DEGREES.
 

1.  POP CORN IN AIR POPPER; PLACE THE POPPED CORN IN A LARGE BAKING PAN.  
2.  IN A MEDIUM SIZED SAUCEPAN OVER MED/HIGH HEAT, MELT THE BUTTER, BROWN SUGAR AND SALT. BRING TO A ROLLING BOIL, STIRRING ONCE OR TWICE. WHEN THE MIXTURE FOAMS,ABOUT 1 MINUTE AFTER IT BOILS,   POUR IT IMMEDIATELY OVER THE POPCORN.  STIR WELL.  
3.  PLACE INTO YOUR PRE-HEATED OVEN AND BAKE 4-6 MINUTES. STIR.  BAKE 4-6 MINUTES MORE, UNTIL IT’S A LIGHT GOLDEN BROWN.  LET COOL.  
 
  • STORE IN A COVERED CONTAINER
  • MAKES ABOUT 14 CUPS.


NOTE:  

REAL BUTTER WILL ALWAYS GIVE YOU THE BEST FLAVOR!  
YOU CAN SUBSTITUTE MARGARINE FOR THE BUTTER, HOWEVER, DO NOT USE DIET OR LOW FAT MARGARINE, THEY CONTAIN TOO MUCH WATER.
