A stack of hot, lighter-than-air pancakes can turn the crankiest, grumpy person into a kind, happy person. I’ve seen it happen! It happens to ME every time I enjoy these super-delicious, gluten and dairy-free Heavenly Almond Flour Pancakes!
When these golden beauties are topped with Marionberries (or Blackberries) and Marionberry Jam, well, be prepared to have an excellent day! In fact, you won’t be able to have a bad day because these feather-light pancakes induce “good cheer!”
You can even mix up the gluten-free batter the night before – and in the morning, WHAL-LA! A super-simple, delicious, satisfying and uplifting breakfast! All you need to do is heat the griddle or skillet (to approximately 325 degrees) and in minutes you can enjoy Heavenly Almond Flour Pancakes; and only you and I will know how truly easy they are to make.
Okay, it’s time to mix these babies up!
Heavenly Almond Flour Pancakes
1 can coconut milk (13.66 oz.)
1 teaspoon pure vanilla extract
1 tablespoon honey or agave
1/2 cup arrowroot (for Paleo) or potato starch (starch not flour)
1/4 cup coconut flour
1 cup almond flour (very slightly heaped)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon baking powder
1. In a large mixing bowl whisk together the eggs, coconut milk, vanilla and honey until smooth.
2. Add the remaining ingredients and whisk together until smooth and combined. Place 2 tablespoons of batter on a lightly oiled griddle; spread out the batter so it’s even. The pancakes are delicate and fall apart if you use more batter.
I use coconut oil to fry my pancakes. A great coconut oil smells exactly like pure, fresh coconut. Coconut oil gives the pancakes a lovely, crisp, delectable edge.
3. Fry pancakes until the bubbles start to pop or until they are golden brown on the bottom. Flip over and cook until done. Serve hot with your desired topping – ENJOY!

And sometimes (don’t tell anyone) I put on Chocolate Ganache! I know – I’m really bad. When I make Scandinavian Chocolate Torte sometimes I have extra glaze left over and I really can’t help myself – it calls my name, loudly, from the frig and . . . next thing ya know, I have heated up a wee bit of it . . . ahhh . . . HEAVEN! Now, I mean it. Do NOT tell anyone about this. Next you know everyone will be putting Chocolate Ganache on their pancakes and where will it all end??!
