Now, these pancakes may look like regular pancakes but they are in no way like regular pancakes. No way, no sir! As a matter of fact, these pancakes may be the Holy Grail of power breakfasts.
I adore pancakes! But sadly most pancakes are deficient in vitamins and fiber. Hmmm… that’s not a very good way to start the morning. So, I decided to create gluten-free Gimme Power Pancakes without a smidge of white flour in them. But would my pancakes taste good without resorting to adding some type of white flour or corn/potato or tapioca starch?
OH MY ~ We loved them! And the first time my Gorgeous Man and I had Gimme Power Pancakes we were amazed at how much energy we had. These pancakes turbo-charged us with power to get through the day!
Okay, okay; so we loved them but I needed to try my new gluten-free Gimme Power Pancakes on someone other than my Gorgeous Man and myself. Yes, I needed to try them out on a Wheat Eater! I looked at the calendar and noticed that Lady Glutenite was coming over the next morning and I had some leftover pancake batter. Ah-hah! Yes, she would be the perfect victim, oops, I mean guest to try out my latest creation!
Morning came and Lady Glutenite arrived. I asked her if she would like to try some super-healthy Gimme Power Pancakes (that would most likely change her life).
She nodded tiredly, “I suppose so.”
I spooned some pancake batter on the griddle and when they were golden brown I flipped them over, finished cooking them; then put two large pancakes on her plate. She slathered on some butter, then I passed her the pitcher of warm real-maple syrup and waited for her response.
She ate silently, then finally said, “These are good; what’s in them?”
“Oh… I have a Don’t Ask ~ Don’t Tell Policy when it comes to Power Pancakes.”
She laughed, “I like these pancakes. They taste good, I like the texture. Yeah, these are good.”
Wow – you have no idea what high praise that is. So, since these are my new favorite pancakes I have to share them with you! Gimme Power Pancakes are gluten-free, dairy-free and high in protein and fiber but most important; they’ll make you happy in the morning!
Gimme Power Pancakes
Gimme Gluten Free
1 cup almond flour
2/3 cup coconut flour
1/3 cup ground flaxseed
1/3 cup teff flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon baking powder
1 can coconut milk Net 13.66 FL OZ. (403 ml)
2 tablespoons apple cider vinegar
3/4 cup water
7 large or extra-large eggs (yes, that’s right, seven eggs)
2 tablespoons maple syrup
- Whisk first 7 ingredients together in a large bowl. Add the coconut milk, vinegar, water, eggs and maple syrup; whisk until smooth. Cover and pop in your refrigerator.
- In the morning simply spoon about 1/4 cup of batter on your greased griddle. (Heated to approximately 350 degrees.) I cook my pancakes in coconut oil. Coconut oil will give your pancakes a lovely crispy edge.
- Cook pancakes until golden brown on one side; flip over and cook until done. (Don’t under-cook ~ high fiber, gluten-free pancakes take a bit longer to cook than regular pancakes ) Enjoy!
Serving suggestions: Butter/Ghee/Spread of your choice, Maple Syrup, Fresh Blueberries, Banana slices and Toasted Pecans.
