People have enjoyed the classic, timeless combination of freshly picked berries – blackberries, raspberries, blueberries or strawberries topped with sweetened whipped cream for thousands of years. So why change perfection? Well… because I wanted to enjoy something more decadent than the basic, “Fresh Berries topped with Whipped Cream” that we all are familiar with.
I decided to top fresh berries with unsweetened whipped cream scented with pure vanilla extract, a sprinkle of brown sugar, a touch of sea salt and toasted pecans. Ooooooooh!!!
I LOVED IT! It was so simple yet lusciously delicious!
What made the all the difference? It was the combination of the brown sugar combined with the sea salt sprinkled on the unsweetened whipped cream! This combination changed the plain cream into an almost ethereal, caramel tasting delicacy.
Sea Salt has a marvelous complex taste that some chefs describe as having an “almost sweet taste” and does amazing things in bringing out flavor. If you cannot find a great sea salt, you can use kosher salt, which is available at most grocery stores. I do not recommend using an iodized table salt; use a natural salt – you won’t believe the flavor difference!
- Beat the cream and vanilla at medium speed in a chilled bowl. When the cream starts to thicken, increase the speed to high and beat until the cream looks like light, creamy clouds.
Lynn’s Notes: Eating a small portion of Fresh Berries with Salted Sweet Cream was an exquisite torture for me since I can only have a wee bit of dairy. But a few bites of this gluten-free treat was pure Nirvana! If you can enjoy dairy products, you simply MUST try this simple dessert.
