Okay, okay! I’ll stop talking and give you the recipe. Now go forth, be nutty and make cookies! Ohhhhhh…and did I mention that these are AWESOME to take to a picnic? I didn’t? Well, they are!
And did I tell you that they are WONDERFUL for breakfast? (I know, I’m so bad – Cookies for breakfast!) Try it – you’ll LOVE it!

These gluten-free Peanut Butter Cookies are yummy, good-for-you cookies that will put a smile on your face. These cookies have absolutely no flour in them – they POP with flavor! A true family fave!
Preheat oven to 325°F
Grease two cookies sheets
1 cup ALL NATURAL peanut butter (just peanuts and salt – that’s ALL!)
1 teaspoon pure vanilla extract
1/2 cup packed brown sugar
1/3 cup white sugar (try organic cane sugar)
1 large egg (preferably organic)
1 teaspoon baking soda
1 tablespoon honey
2 tablespoons soft butter (or Earth Balance Natural Buttery Sticks)
1. In a mixing bowl beat together the peanut butter, vanilla and sugars at medium speed until well blended; about two minutes.
2. Add egg and baking soda; mix for one minute. Add the honey and butter; beat all together another minute or two.
3. Roll into walnut sized balls (or you could use a cookie scoop), then create a criss-cross pattern with a fork. Bake for 10-13 minutes, or until lightly browned. Cool on the baking sheet – ENJOY!
