Belgian Waffles. Thick, lovely delicious waffles. Oh, I would be so HAPPY if I could have one… if only… But, wait, I can! My new waffle recipe, Amazingly Happy Healthy Belgian Waffles, is actually (drum roll please…) PALEO! Serious wow power. In fact, these waffles might be the best waffles you have ever eaten in your life!
How would I describe them? Well… they are hearty, yet light… they have great flavor, and everyone who has tried them has LOVED them! What is most amazing is these delicious gluten-free waffles are made with super-healthy ingredients: Protein packed almond flour, ground flaxseed, high fiber coconut flour and healing arrowroot flour.
And besides being gluten-free, you can make these waffles completely dairy-free. Rich, creamy coconut milk makes the most luxurious batter! Now, I know Paleo-ites are strictly against dairy, but since I am not a virtuous Paleo-person, I do enjoy a little ghee (clarified butter) in my waffle batter (and sometimes a tiny bit of Irish Butter spread on my hot, baked waffles… it’s so GOOD! Uh, did you really believe that “tiny bit” part??) Anyway… my Happy Belgian Waffle recipe is equally delicious using coconut oil (which is Paleo friendly) or ghee or butter – hooray!
Oh, just in case you were wondering “what is a PALEO?” ~ here’s the scoop: Paleo is actually a diet. Some people call it the “caveman diet” and others call it the “Paleo Diet.” Briefly, if you are on a Paleo Diet you eat grass fed meats, fish and seafood, fresh fruit and veggies, eggs, nuts & seeds, and healthy oils (avocado oil, olive, coconut, walnut & flaxseed oil, for example.) Sounds fabulous right? But what doesn’t a person eat on a Paleo Diet? Here’s the list: No grains, legumes or peanuts. No dairy, no refined sugar (honey and maple syrup are okay) and no potatoes or any processed or refined food.
Now since, most folks on the Paleo diet consider maple syrup to be okay, I do use real maple syrup in this recipe. That wee bit of real maple syrup in the batter will help your waffles to turn a lovely golden brown color. And don’t leave out the pure vanilla extract! Vanilla extract will make your waffles – SING! (Seriously.) You can hum along if you like.
Amazingly-HAPPY (Healthy) Belgian Waffles
2 cups almond flour
1/2 cup arrowroot flour
1/3 cup ground flaxseed
1/3 cup coconut flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1 can (13.66 oz) coconut milk (not lite – use full fat coconut milk)
3 tablespoons real maple syrup
4 large eggs
1/4 cup melted coconut oil (or ghee or butter – your choice!)
1/4 cup water
2 teaspoons pure vanilla extract
1. Heat your Belgian waffle iron. Stir together the dry ingredients and set aside in a medium size bowl.
2. Whisk the coconut milk until smooth; add maple syrup, eggs, ghee, water and vanilla. Add the dry ingredients and whisk in the until smooth.
3. Cook the waffles according to your waffle iron’s directions.
Lynn’s Notes: You can mix up the batter the night before. Simply cover the batter with plastic wrap, refrigerate; then cook in the morning ~ so easy!
Now, onto important matters. Topping your waffle… you can top your waffles any way you like (Paleo or not – hey, it’s YOUR life!) And it’s up to you how decadent you want to be. You could lavishly butter your waffles and pour real maple syrup on top (like in the photo). Alternately, you could top your waffles with fresh fruit and whipped cream. (Yes, I know that Paleo-ites do not use whipped cream.) Ooooh, another thought: Warm, sauteed, cinnamon apples! Or fresh blueberries, strawberries, raspberries, or peaches… HEY! Just go wild! Seize the day! Enjoy your waffles! And remember to hug a Paleo-ite! We all need love!
